Ripple afghan
Took a while to complete... But I finally finished The ripple afghan!! Love the names of the colors in this... strawberry, vanilla, lemon and peach! Made this blanket for Evelyn, hopefully she treasures it for years to come!

Pumpkin Morning Glory Muffins
Pumpkin, pineapple, raisins, coconut and carrot... together!! YUMMY
Pumpkin Morning Glory Muffins
1 box yellow cake mix
1 (15oz) can pumpkin
1 medium carrot, shredded
1/2 cup crushed pineapple (canned, with juice)
1/2 cup raisins
1/4 cup shredded coconut
Mix all ingredients in large bowl with spoon until very well combined. Drop heaping tablespoonfuls of batter in greased muffin tin. Bake in preheated oven at 350 for 20-30 minutes or until toothpick inserted in middle comes out clean. Cool on wire rack. Store in airtight container. Makes about 20 muffins.

Heavenly Stuffed Shells
This idea started with a conversation between my boyfriend Mike and I. Talking about mixing tomato sauce and alfredo sauce and whatever else we could get in there!! And then this heavenly dish was born!!
Heavenly Stuffed Shells
1 box jumbo pasta shells
1 pound ground italian sausage
15 oz ricotta cheese
4 cups shredded mozzarella cheese
1 egg
dash or two of garlic powder
1 tablespoon of dried parsely flakes
1 tablespoon oregano (or italian seasoning mix)
1 jar favorite spaghetti sauce
1 jar favorite alfredo sauce
1) Cook jumbo shells according to package directions.
2) Brown and crumble ground italian sausage until no longer pink. Cool.
3) In large bowl mix ricotta cheese, 2 cups mozzarella cheese, egg and seasonings. mix with fork until well blended. Add cooled sausage and mix well.
4) Pour tomato sauce into bottom of baking dish (one 13x9 or two 8x8 baking dishes).
5) stuff cooled shells with sausage cheese mixture. Place stuffed shell on tomato sauce.. repeat filling baking dishes with as many shells as you can. Pour alfredo sauce over top of shells. Top with remaining mozzarella cheese. Cover with foil and bake at 375 degrees for 30-45 minutes or until heated through and bubbly. Let stand a few minutes before serving.

Snow Fall Afghan
Started a new crochet project last night. Was going to be a baby blanket for a friends baby shower gift, but the yarn I got is too thick making the blanket too bulky for baby. So I am going to make a new one for her and finish this one as a throw for the living room. Here is the beginning of it
Apple Pie Stuffed Cinnamon Rolls
Apple Pie Stuffed Cinnamon Rolls
1 can apple pie filling
2 cans pillsbury cinnamon rolls with icing
1) Pre heat oven to 350 degrees. Open cans of cinnamon rolls and using hands or rolling pin, flatten each roll individually into a thin disk.
2) Top half of the disks with a soup-spoon-size scoop of apple pie filling. Place another flattened disk on top to create a sandwich. Place each "sandwich" on to a baking sheet.
3) Bake for about 20-25 minutes or until nicely browned and baked through. Cool slightly and then spread icing on top of each roll. Enjoy warm or cool longer to eat as a handheld turnover!
